Breakfast Burrito w/ Chorizo & Egg

One of my favourite types of breakfast is the classic American breakfast. The mix of eggs and potatoes and breakfast meats is just so fulfilling and hearty (and the perfect way to start off a day!

During my travel to the US recently, I went to a brunch spot and had a delicious breakfast hash wrap. When I returned I couldn’t stop thinking about it so I decided to recreate it to the best of my ability! And I must say, it turned out ABSOLUTELY amazing.

INGREDIENTS

  • 1 Potato
  • 2 eggs
  • 1 Chicken Chorizo Sausage
  • White Cheddar Cheese
  • Mexican Salsa
  • Tortilla Wrap
  • Salt
  • Pepper

STEPS

  1. Wash potato and cut into long thin slices (hash brown size).
  2. Spray with olive oil & add to air-fryer for 13-15 minutes at 200 °C.
  3. While potatoes cook, chop up some chorizo sausage and fry off in a pan according to package instructions.
  4. Whisk 2 eggs in a bowl with some salt and pepper and add to chorizo and scramble.
  5. Warm up a tortilla in a different pan. Add egg & sausage scramble, hash browns, salsa and cheese to the tortilla and roll.
